The
Praliné Tradition. The
style of the Belgian filled chocolate, called
the praliné, was invented in Belgium in
the early 20th century. Unique fillings are placed
in a variety of custom molds of milk, dark or
white chocolate. Over the years a number of filling
styles were developed to match the different chocolate
types. Of course, the finest pralinés are
made only with natural ingredients, without fillers,
hydrogenated oils or preservatives.
The
Shell - The
chocolate shell made from the finest 60% dark,
32% milk or 28% white coverture chocolate. Our
secret: The chocolate used for the shell is
kept warm. The first time the chocolate is tempered
is when the finished chocolates are made, saving
the full bouquet of fresh chocolate aromas that
is otherwise lost in processing.
The Ganache:
Typically called a truffle filling
in America, ganache is made by melting pure chocolate
over heavy cream until velvety smooth. Coffee,
flavored liquor or fruit are often added to enhance
the flavor. Our secret: We have the largest variety
of ganache styles including Champagne, Amaretto,
Ginger and Earl Grey.
The Caramel:
There is a delicate art in making
fine caramel. When combined with our premium coverture,
the result is simply breathtaking. Our Secret:
Careful combination of premium ingredients according
to an old, traditional Belgian method yields an
incredibly smooth and buttery caramel filling.
Finest
All Natural Ingredients: Sugar,
cocoa mass, cocoa butter, whole milk powder, fresh
butter, natural palm oil, coffee paste, walnuts,
hazelnuts, almonds, cherries, raspberries, pistachio,
coconut, rice crisp, corn flakes, natural flavorings,
soya lecithin (an emulsifier), natural vanilla.
Dark chocolate: min. 60%, Milk Chocolate: min.
34%, and White chocolate: min. 28% cocoa solids.
No hydrogenated oils, stabilizers or artificial
flavors!
NOTE:
During warm weather
chocolate melts quickly. If you are sending chocolate
to a warm place, please select Next Day shipping
with Cold Pack Option at checkout (an additional
$28.95 per order applies). We are not responsible
for melted chocolate if you do not choose this
option, and your order is shipped to a warm address
(i.e. Arizona, Florida, Texas). This is the required
shipping method for all orders placed between
6/1 and 9/15. Orders placed on Friday or Saturday
are sometimes shipped on Monday based on Rose
City's discretion so your wonderful chocolates
do not sit in a warehouse all weekend.
